Cabernet Sauvignon is a relatively new variety for Michigan as it is difficult to ripen in our cool maritime climate. It must be cropped very light to not stress the plants and clusters must be fully exposed to the sun during ripening, but the resulting wine is worth the extra time and effort. The abundance of dark fruit character and hint of black pepper along with a firm tannin backbone make this a perfect food wine.
